  • 1 tbsp - oil
  • 2 - potatoes, boiled and sliced
  • 2 - eggs, beaten
  • 4 - spring onions, finely sliced
  • 1 tbsp - chopped coriander leaves
  • 1/2 tsp - pepper powder
  • 1/2 tsp - salt
  • 1 tbsp - low fat cheese, grated

How to Make Low Fat Eggs Fritta

  • In a small non-stick frying pan, heat oil over medium heat.
  • Add boiled and sliced potatoes and fry it on low to medium heat for 5 minutes.
  • In a bowl, whisk together eggs, spring onions, coriander leaves, salt and pepper.
  • Heat the grill/ pre-heat oven at 180 degrees C.
  • Tip the eggs into the frying pan and mix it quickly.
  • Lower the heat and then sprinkle cheese over it.
  • After about 8 minutes, once the top side is almost done, pop it under the grill for 2-3 minutes.
  • Slide it out of the pan. Eat it with mayo or ketchup.
