Ingredients

  • 1 tbsp - oil
  • 2 - potatoes, boiled and sliced
  • 2 - eggs, beaten
  • 4 - spring onions, finely sliced
  • 1 tbsp - chopped Coriander leaves
  • 1/2 tsp - pepper powder
  • 1/2 tsp - salt
  • 1 tbsp - low fat cheese, grated
  • How to Make Low Fat Eggs Fritta:

    1. In a small non-stick frying pan, heat oil over medium heat.
    2. Add boiled and sliced potatoes and fry it on low to medium heat for 5 minutes.
    3. In a bowl, whisk together eggs, spring onions, coriander leaves, salt and pepper.
    4. Heat the grill/ pre-heat oven at 180 degrees C.
    5. Tip the eggs into the frying pan and mix it quickly.
    6. Lower the heat and then sprinkle cheese over it.
    7. After about 8 minutes, once the top side is almost done, pop it under the grill for 2-3 minutes.
    8. Slide it out of the pan. Eat it with mayo or ketchup.
