Ingredients

  • 10 - lychees, crushed coarsely
  • 10 - Prunes
  • 2 cups - plain flour
  • 1 tsp - instant coffee powder
  • 1/2 tsp - vanilla essence
  • 100 ml - club soda
  • 1/2 cup - butter, softened
  • 1/2 tin - condensed Milk
  • 1/2 cup - warm Milk
  • 2 tsp - Lemon juice, strained
  • 1/2 tsp - baking soda
  • 1 tsp - baking powder
  • 2 pinches - salt
  • How to Make Lychee - n - Prune Muffins:

    1. Dissolve coffee powder in 1/2 cup boiling water.
    2. Chop prunes, add to decoction, keep aside for 4 - 5 hours.
    3. Sieve flour, soda, baking powder, salt, together 2 - 3 times, keep aside.
    4. Beat butter, condensed milk, till well blended.
    5. Add lemon juice to warm milk, stir.
    6. Add to mixture, add essence, and beat till fluffy and light.
    7. Add flour, prunes and lychees and mix well.
    8. Add 100 ml soda and mix gently.
    9. Pour into greased or paper cup lined muffin moulds.
    10. Pour 2/3 full in each mould, till all batter is used.
    11. Bake in preheated oven at 180 C for 5 minutes, then 150 C for 20 minutes.
    12. Check by inserting skewer, if it comes out clean, before taking out.
    13. Remove, cool in container for 5 minutes, remould very gently.
