  • 20 - Almonds
  • 1/2 cup - Lychee (chopped)
  • 1 tsp - Chironji seeds/charoli seeds
  • 4 cups - Milk
  • 1/2 cup - Sugar
  • 1 tbsp - Saffron strands
  • 1/2 tsp - Cardamom powder
  • Pistachios (for garnishing)
  • How to Make Lychee Badam Kheer:

    1. In a microwave oven, cook the almonds and chironji seeds with enough water for 1 minute on high, keep aside.
    2. When it has cooled, grind the almonds, chironji seeds, and chopped lychee with enough milk to make a smooth paste.
    3. Meanwhile add the saffron strands to the milk and boil it.
    4. Add sugar, almond-chironji paste, and cardamom powder and cook for a few minutes.
    5. Allow it to cool.
    6. Refrigerate it for 2 hours minimum.
    7. Garnish with pistachios and serve chilled.
