Ingredients

  • 1 - mango (not too ripe, with a hint of sweetness )
  • 2 tsps - fenugreek seeds (vendhayam)
  • 6-7 - dry red chillies (veththamolagai)
  • 1 tsp - mustard seeds (kadugu)
  • 1 stem - curry leaves (karugapilai)
  • 1 tsp - red gram dal (kadalai paruppu)
  • 1 cup - grated coconut
  • 1-2 tsp - salt
  • 3 cups - fresh curd
  • 1 tsp - turmeric powder

How to Make Maampazha Kootu

  • Fry the fenugreek seeds, curry leaves and red chillies in one tsp oil.
  • Turn off the flame and add the coconut to the mixture but don't fry the coconut.
  • Let the mixture cool off for 5 minutes and then grind them into a fine paste.
  • In a kadai, sputter mustard in 1 tsp oil, add some curry leaves and red gram dal.
  • Add the mangoes to the oil after cutting it into finger-sized pieces.
  • Close the lid and fry it for 5-10 minutes.
  • Add the ground paste to the mango and mix well.
  • Add 1-2 tsp salt and the turmeric powder to it.
  • Add curd to the mixture and wait for it to simmer once.
  • Don't let it simmer more than 5 minutes.
