Ingredients

  • Macaroni - 250 g
  • Chopped Tomatoes - 2
  • Chopped Onions - 1 or 2
  • Potato, peeled and sliced - 1
  • Sunflower oil - 1 tbsp
  • Salt to taste
  • Turmeric powder - a pinch
  • Coriander powder- 1/2 tsp
  • For tempering:
  • Mustard Seeds - 1/2 tsp
  • Split Urad Dal / black gram dal - 1/2 tsp
  • Hing or Asafoetida - a pinch
  • Green chillies - 2, chopped into small pieces
  • Curry leaves - 5, washed and chopped
  • How to Make Macaroni Uppuma:

    1. Boil the macaroni in a pot of water with salt.
    2. When cooked, drain the pasta.
    3. In a frying pan, heat the oil and add the mustard seeds.
    4. When it splutters, add all the other tempering ingredients and temper until the dal is golden brown.
    5. Now, add the chopped onions, tomatoes, potatoes, salt, turmeric powder and coriander powder.
    6. Add half a glass of water, cover and cook till well done.
    7. Add the boiled macaroni.
    8. Cook for 5 minutes.
