Ingredients

  • short macaroni - 1 cup
  • mixed vegetables - 1 cups, diced
  • (potato, carrot, beans, peas, cauliflower etc.)
  • green chillies - 6 to 8, slit
  • oil - 2 tbsp
  • cloves and cinnamon - 3 each
  • onions - 2, chopped
  • rice flour - 1 tbsp
  • thick coconut milk - one and a half cup
  • sugar - 1 tsp, optional
  • salt to taste

How to Make Macaroni Vegetable Stew

  • Cook macaroni as directed on the pack.
  • Heat oil, add cloves, cinnamon and onion.
  • When onions are just softened (not colored) add vegetables and green chillies.
  • Cook till vegetables are soft.
  • Add salt and rice flour mixed with 2 tbsp of water.
  • Simmer for 2 minutes.
  • Add the macaroni and coconut milk.
  • Just as it begins to boil, remove from fire.
  • Serve hot with garlic toast.
