Ingredients

  • short macaroni - 1 cup
  • mixed vegetables - 1 cups, diced
  • (potato, carrot, beans, peas, Cauliflower etc.)
  • Green chillies - 6 to 8, slit
  • oil - 2 tbsp
  • Cloves and Cinnamon - 3 each
  • Onions - 2, chopped
  • Rice flour - 1 tbsp
  • thick Coconut Milk - one and a half cup
  • Sugar - 1 tsp, optional
  • salt to taste
  • How to Make Macaroni Vegetable Stew:

    1. Cook macaroni as directed on the pack.
    2. Heat oil, add cloves, cinnamon and onion.
    3. When onions are just softened (not colored) add vegetables and green chillies.
    4. Cook till vegetables are soft.
    5. Add salt and rice flour mixed with 2 tbsp of water.
    6. Simmer for 2 minutes.
    7. Add the macaroni and coconut milk.
    8. Just as it begins to boil, remove from fire.
    9. Serve hot with garlic toast.
