  • 1 - big onion, chopped finely
  • 1/2 cup - fine rava,
  • 1/2 cup - Rice flour
  • 1/2 cup - Maida
  • 10 - curry leaves, chopped
  • 4 - green chillies, chopped finely
  • 1/2 tsp - asafetida
  • 1/2 tsp - baking soda
  • Oil for Deep Frying
  • Warm water to knead the dough
  • Salt to taste.
  • How to Make Maddur Vadas:

    1. In a bowl add the flours, soda, green chillies, asafoetida, curry leaves, salt and mix thoroughly.
    2. Take a flat bottom pan, heat about 4 tsp. of oil and then add the chopped onions. Saute until it becomes soft and transparent. Let it cool.
    3. Add the onions to the bowl of flour
    4. Now add warm water little by little and make a thick dough. Knead well for about 2-3 minutes and cover this with a damp cloth. Keep it aside for 30 minutes.
    5. Divide the dough into lemon sized portions and make vadas with wet hands.
    6. Deep Fried in hot oil and maintain the temperature at medium heat to get the vadas uniformly cooked.
    7. Transfer vadas to a colander lined with kitchen towel to absorb excess oil. Serve hot.
