Ingredients

  • 4 cups Rice Flour
  • 2 cups Maida Flour
  • 1 cup Suji (small)
  • 1/2 stick Butter
  • 3 medium Onions
  • Coriander leaves (chopped finely)
  • 3-4 Green chillies (depending on your taste)
  • Salt to taste
  • 1 tsp Red Chilli powder (optional)
  • 2-3 tbsp Water (put as little as possible)
  • Oil for frying
  • How to Make Maddur Vade:

    1. Cut the onions into very long and thin pieces.
    2. Fry suji in a large pan over medium heat until lightly golden.
    3. Remove from heat and transfer to a mixing bowl.
    4. Mix the chopped onions with the rice flour, maida and suji.
    5. Do not add water at this time.
    6. Heat the butter a little and pour it into the bowl and add the rest of the ingredients to it.
    7. Mix all ingredients to form a moist, soft dough.
    8. Add water only if necessary.
    9. Heat the oil in a kadai.
    10. Divide the dough into small portions, flatten each portion like a thin flat plate and deep fry in oil until golden and crispy.
    11. Can be served alone or with coconut chutney.
