4 cups Rice Flour
2 cups Maida Flour
1 cup Suji (small)
1/2 stick Butter
3 medium Onions
Coriander leaves (chopped finely)
3-4 Green Chillies (depending on your taste)
Salt to taste
1 tsp red Chilli Powder (optional)
2-3 tbsp Water (put as little as possible)
Oil for frying
How to Make Maddur Vade
Cut the onions into very long and thin pieces.
Fry suji in a large pan over medium heat until lightly golden.
Remove from heat and transfer to a mixing bowl.
Mix the chopped onions with the rice flour, maida and suji.
Do not add water at this time.
Heat the butter a little and pour it into the bowl and add the rest of the ingredients to it.
Mix all ingredients to form a moist, soft dough.
Add water only if necessary.
Heat the oil in a kadai.
Divide the dough into small portions, flatten each portion like a thin flat plate and deep fry in oil until golden and crispy.
Can be served alone or with coconut chutney.
