Ingredients

  • 170 gms - Refined flour
  • 1/2 tsp - Baking powder
  • 3 - eggs
  • 50 ml - Milk for mixing
  • 1/2 tsp - Grated Lemon rind
  • 115 gms - Sugar
  • 115 gms - Butter
  • 2 drops Lemon essence
  • Citron peel (optional)
  • How to Make Madeira cake with lemon essence:

    1. Sieve dry ingredients and add grated lemon
    2. Cream butter and sugar.
    3. Beat in eggs a little at a time.
    4. Add sieved dry ingredients to creamed mixture alternately with a little milk and essence.
    5. Bake for 1 – 1.5 hours at 175 degrees C on gas mark 4.
    6.   To Decorate: Place a slice of peel on top before baking.
