Ingredients

  • Basmati Rice - 2 cup
  • Grated Coconut - 3 cup
  • Dry Red Chilli - 6
  • Urad Dal - 2 tsp
  • Channa dal - 2 tsp
  • Coconut oil - 2 tbsp
  • Mustard - 1 tsp
  • Curry leaves - a few
  • Salt to taste.
  • How to Make Madras Coconut Rice:

    1. Soak the rice for 10 mins.
    2. Cook the rice with salt and 1 tsp oil till its almost done and not overcooked
    3. Heat oil in a kadhai and splutter the mustard seeds. Now add the dals, curry leaves and split red chillies and saute until golden brown.
    4. Now add the grated coconut and fry until it turns a golden brown.
    5. Add rice to it and saute for 5 mins on medium heat.
    6. Serve hot.
