  • For the stuffing:
  • Grated Coconut - 2 cups
  • Powdered Jaggery - 1 cup
  • Cardamom powder - 1 tsp
  • Ghee - 1 tsp
  • For the dough:
  • Maida flour - 1 cup
  • Oil - A few tsps (to knead the dough)
  • Oil - To deep fry
  • How to Make Maida Kozhukattai:

    1. Take a hard-bottom pan and heat the ghee in it.
    2. Then, add a little water to the pan, and when water boils, add the powdered jaggery.
    3. When the jaggery melts, immediately add the grated coconut and keep stirring constantly, while keeping the gas low.
    4. When the entire mixture turns into a solid - without sticking to the pan - switch off gas and add cardamom powder.
    5. Knead maida into a soft, stretchy dough with water and oil.
    6. Roll the dough into uniform balls.
    7. Keep a tsp of the stuffing inside each ball and deep fry the balls in oil till they turn brown.
