How to Make Malai chicken

  • Heat 1 tbsp oil in a pan, add dry spices and saute, add half the quantity ginger garlic paste and saute
  • Add chicken and fry on high for 3 to 4 mins. Set this aside to cool
  • Add 1 tsp oil to the same pan, add pureed tomatoes and fry till almost dry.
  • Once cool, combine fried chicken, tomato puree, yogurt, fried onions, mint, coriander leaves, ginger garlic paste, turmeric, green chilli, red chilli powder, salt and half of chicken masala powder.
  • Marinate the chicken, set aside for at least 1 hour.
  • To prepare the gravy, heat butter or oil, add marinated chicken and cook on a very low flame, stirring occasionally.
  • Cook covered till the chicken turns tender. If needed add very little water while cooking.
  • Once the chicken is almost done, add the rest of the chicken masala powder, kasuri methi and cream. Cover and cook for 3 to 4 mins.
  • Garnish with coriander leaves
  • Serve hot.
