How to Make Malpoa with Rabri

  • Dissolve sugar in water and simmer gently for three minutes.
  • Boil the milk till it becomes like a thick paste. Beat till smooth.
  • Cool and add maida and rawa. Depending on how thick the milk paste is, you may need to adjust the quantity of rawa.
  • The mixture should be like very soft dough or stiff paste.
  • Take small lumps of this mixture and press on a plastic sheet and flatten into thin discs.
  • Deep fry the discs in very moderately hot oil or ghee till golden in colour.
  • Drain from oil/ ghee and add to the syrup. Let them soak at least for 1 hour.
  • Just before serving, drain from syrup and arrange on a serving plate.
  • Pour the rabri over it and decorate with almond and pistachio slices.
