  • Milk - 1 litre
  • Maida - 1 tbsp
  • Chiroti Rawa - 1 to 2 tbsp
  • Cardamom powder - 1/2 tsp
  • Oil or Ghee to fry
  • Some rabri
  • Handful of Almonds and pistachios, slivered
  • Sugar syrup:
  • Sugar - 1 cup
  • Water - 1/2 cup
  • How to Make Malpoa with Rabri:

    1. Dissolve sugar in water and simmer gently for three minutes.
    2. Boil the milk till it becomes like a thick paste. Beat till smooth.
    3. Cool and add maida and rawa. Depending on how thick the milk paste is, you may need to adjust the quantity of rawa.
    4. The mixture should be like very soft dough or stiff paste.
    5. Take small lumps of this mixture and press on a plastic sheet and flatten into thin discs.
    6. Deep fry the discs in very moderately hot oil or ghee till golden in colour.
    7. Drain from oil/ ghee and add to the syrup. Let them soak at least for 1 hour.
    8. Just before serving, drain from syrup and arrange on a serving plate.
    9. Pour the rabri over it and decorate with almond and pistachio slices.
