  • 2 cups - Mango (preferably Alfonzo), peeled and cut into 1 cm cubes
  • 1 cup - fresh lychees, peeled and chopped
  • 300 ml - thick Coconut Milk
  • 1 cup - Sugar
  • 1 cup - whipping Cream
  • 4 tsp - gelatine
  • Mango slices, lychees and Cherries to decorate
  • How to Make Mango Lychee Ambrosia:

    1. Soak gelatine in 4 tbsp of water for 10 minutes. Stir over a low flame to dissolve completely.
    2. Add it to the coconut milk. Add sugar and stir till dissolved.
    3. Beat the cream till thick.
    4. Reserve some of it in refrigerator for decoration.
    5. Place the coconut milk in a bowl of ice and stir till it begins to set.
    6. Fold in the remaining cream, mango and lychees.
    7. Pour in a bowl and leave in refrigerator to set.
    8. Serve decorated with reserved cream, mango, lychees and cherries.
