  • 2 cups - Mango (preferably Alfonzo), peeled and cut into 1 cm cubes
  • 1 cup - fresh lychees, peeled and chopped
  • 300 ml - thick Coconut Milk
  • 1 cup - Sugar
  • 1 cup - whipping Cream
  • 4 tsp - gelatine
  • Mango slices, lychees and Cherries to decorate

How to Make Mango Lychee Ambrosia

  • Soak gelatine in 4 tbsp of water for 10 minutes. Stir over a low flame to dissolve completely.
  • Add it to the coconut milk. Add sugar and stir till dissolved.
  • Beat the cream till thick.
  • Reserve some of it in refrigerator for decoration.
  • Place the coconut milk in a bowl of ice and stir till it begins to set.
  • Fold in the remaining cream, mango and lychees.
  • Pour in a bowl and leave in refrigerator to set.
  • Serve decorated with reserved cream, mango, lychees and cherries.
