Ingredients

  • 4 Corn tortillas, fried or baked crisp
  • 2 cups shrimps, shelled, deveined and cooked
  • 1 cup French dressing
  • 2 cups shredded Lettuce leaves
  • For Salsa:
  • 3/4 cup cooked beans
  • 2 ripe mangoes, peeled and diced
  • 1/2 cup chopped Onions
  • 1/4 cup Chicken stock
  • 3 tbsp Lemon juice
  • 1/4 cup chopped Coriander leaves
  • 2-3 green chillies, chopped
  • 1/4 cup chopped Capsicum
  • 2 tbsp Olive oil
  • Salt to taste
  • Pepper as per taste
  • How to Make Mango Toastadas with Shrimp:

    1. Mix all the salsa ingredients. Keep aside for 6-7 hours.
    2. Arrange tortillas in a plate.
    3. Spread shrimps over it.
    4. Pour the salsa over it.
    5. Garnish with French dressing and lettuce leaves.
