Ingredients

  • Raw Mango - 1 kg (grated)
  • Refined Oil - 200 ml
  • Mustard Seeds - 1/2 tsp
  • Fenugreek / Methi seeds - 1 tsp
  • Turmeric - 1/2 tsp
  • Jaggery - 200 g
  • Salt - to taste
  • Kashmiri Chilli Powder - 5 tsp
  • How to Make Mango Tokhu - Instant Mango Pickle:

    1. Heat oil in a wok/kadai. Add mustard and let it splutter.
    2. Add methi seeds, turmeric and fry for 2 minutes.
    3. Add grated mangos, salt and cook for some time.
    4. Finally add chilli powder, jaggery and cook till oil starts separating in the corners.
    5. The pickle is ready to serve.
