Ingredients

  • 500 g - mutton, cut into serving portions
  • 150 g - baby potatoes, peeled
  • 1/2 cup - beaten curds
  • 2 - medium tomatoes, blanched and sliced
  • 2 - big onions
  • 4 flakes - garlic
  • 1" piece - ginger
  • a few sprigs coriander leaves
  • 1 tsp - turmeric powder
  • 1 tbsp - each of garam masala and ground cumin seeds
  • salt to taste

How to Make Mansha

  • Fry the potatoes lightly in oil and set aside.
  • Grind onions, ginger and garlic to a paste.
  • Soak the mutton in curd and tomatoes for 1 hour.
  • Heat 4 tbsps. oil and add onion paste and fry to a golden colour.
  • Add all the spices and fry briefly.
  • Put in the mutton mixture and salt and cook till the mutton turns dry, then fry to a rich red colour.
  • Cover mutton with hot water and cook till it is almost done, put in the potatoes and continue cooking till the mutton and the potatoes are done.
  • Serve decorated with coriander leaves.
