  • 6 to 8 - eggs
  • 3 tbsp - tea leaves
  • 1 tbsp - cinnamon stick
  • 3 tbsp - soya sauce
  • 3 - star anise

How to Make Marbled Eggs

  • Boil eggs for 10 mins until hard boiled.
  • Drain and cool at once by placing in iced water.
  • Tap each egg with the back of a spoon until cracks appear all over.
  • Take enough water in a pan so that the eggs are covered with water.
  • Keep the pan on fire.
  • Add tea leaves, cinnamon, star anise and soya sauce.
  • Simmer gently on low flame for at least half hour.
  • Allow to cool and shell before serving.
  • Serve along with chilli sauce.
