Ingredients

  • Broccoli florets - 1 cup
  • Cucumber (peeled and sliced) - 1
  • Onion, thinly sliced - 1
  • Green bell pepper thinly sliced - 1
  • Red bell pepper, thinly sliced - 1
  • Carrots, peeled, thinly sliced - 2
  • Parmesan cheese, grated - 3/4 cup
  • Minced Parsley - 1 tbsp
  • Dried Oregano - 1 tsp
  • Dried Basil - 1 tsp
  • Cherry tomatoes, halved - 3-4
  • Salt and pepper
  • How to Make Marinated Vegetable Salad:

    1. Combine all ingredients, except tomatoes, in large bowl.
    2. Cover and refrigerate overnight, stirring occasionally.
    3. Add tomatoes, season with salt and pepper and toss.
