Ingredients

Broccoli florets - 1 cup

Cucumber (peeled and sliced) - 1

Onion, thinly sliced - 1

Green bell pepper thinly sliced - 1

Red bell pepper, thinly sliced - 1

Carrots, peeled, thinly sliced - 2

Parmesan cheese, grated - 3/4 cup

Minced Parsley - 1 tbsp

Dried Oregano - 1 tsp

Dried Basil - 1 tsp

Cherry tomatoes, halved - 3-4

Salt and pepper

Method

  1. Combine all ingredients, except tomatoes, in large bowl.
  2. Cover and refrigerate overnight, stirring occasionally.
  3. Add tomatoes, season with salt and pepper and toss.
