Masala egg bhurji is a spicy egg dish made in Indian style. The non-vegetarian dish is loved by egg lovers for its unique taste.  

This delicious recipe can be made in a hurry and is served as a side dish in the breakfast or brunch. The goodness of eggs along with its high nutrition value is great to kick start your mornings.

Note: Here is a tip from Bawarchi.com reader Shweta on this recipe. Shweta's tip: This Masala Egg Bhurji dish can be prepared with boiled eggs to take it to the next level. Use boiled eggs shredded into the curry instead of directly pouring in uncooked eggs and beating them with a fork. The shredded boiled eggs look like Paneer Bhurji. To keep it more healthy, only one egg yolk should be used with three egg whites.

Ingredients

  • eggs - 2
  • Tomatoes - 1, chopped finely
  • Small Onion - 1/2, chopped very fine
  • Green chillies - 2, chopped
  • Ginger - 1/2 tsp, minced
  • Garlic - 1/2 tsp, minced
  • Garam Masala - 1/2 tsp
  • Coriander powder - 1/2 tsp
  • Jeera powder - 1/4 tsp
  • Paprika - 1/2 tsp
  • Oil - 2 tbsp
  • Salt to taste
  • Coriander leaves for garnish
  • How to Make Masala Egg Bhurji:

    1. Beat the eggs lightly and keep aside. | Heat oil on medium high heat and add onion.
    2. Fry them till slightly golden.
    3. Add ginger, garlic and chillies. Fry for 30 seconds.
    4. Add all the masala powders. Fry for about 30 seconds till they become fragrant.
    5. Now add tomatoes and salt, and cook and mash the tomatoes till done.
    6. Next lower the heat to medium or low and add the eggs.
    7. Beat them continuously with a fork till they scramble.
    8. Garnish with coriander leaves and serve hot with rotis.
