For the masala:
1.5 tbsp - Sesame seeds (white)
1.5 tbsp - Sesame seeds (black)
1 tsp - Ajwain (carum seeds)
1 tbsp -

How to Make Masala Puri
Dry roast the ingredients for masala in a pan on slow fire till it starts to emit an aroma.
In a bowl, mix the whole wheat flour, plain flour, salt, red chilli powder and the roasted masala.
Add oil and yoghurt and mix well.
Add enough water to form a medium hard dough. Keep aside for 1 hour.
Make balls, the size of walnuts. Keep aside for 30 mins.
Roll out each ball to about 4/5" diameter discs.
Deep fry in hot oil. Once you lower the puris into oil, it will sink and then rise. At that time, swish oil on the top side of the puri.
This will enable it to puff up well. Flip over and fry the other side as well.
