Ingredients

  • 2 cups - cooked rice
  • 2 -3 - eggs, beaten well
  • 1 - onion, chopped fine
  • 1 tomato, chopped fine
  • Cooked peas
  • 2 - green chillies, chopped fine
  • Ginger and garlic paste
  • 2 tsps - chopped cilantro
  • Jeera powder - as per need
  • Coriander powder - as per need
  • Chilli powder - as per need
  • A pinch of garam masala
  • 2-3 cloves
  • 2-3 cardamom pods
  • 1 inch piece - cinnamon
  • 1 bay leaf
  • 1 tsp - ghee
  • Oil
  • Salt to taste
  • Optional Ingredients:
  • 1/2 - capsicum, cut in thin slices
  • Cooked prawns
  • Cooked cauliflower florets

How to Make Masala Rice in a jiffy

  • Heat oil in a skillet and add the cloves, cardamom, cinnamon, and bay leaf and fry a while.
  • Add the onions and a little sugar (so the onions brown well) and saute till the onions are golden brown
  • Add the ginger and garlic paste and saute for 2-3 minutes.
  • Add salt and the masala powders and stir.
  • Add the chopped chillies and tomato, and saute till you can see the oil separate. (You can add the optional ingredients now, if using.)
  • Add the beaten egg along with the cilantro into this mixture and keep stirring continuously till the egg scrambles and the mixture turns a little dry.
  • Add the rice gradually and mix all the ingredients well.
  • Turn off the heat. Mix in the ghee. Sprinkle the garam masala and serve hot.
