How to Make

  • Soak chick peas in cold water, overnight.
  • Drain and place in a saucepan.
  • Cover with fresh water, bring to the boil, cover and simmer until tender but not mushy, about 45 mins. Drain and place in a bowl.
  • Peel and crush garlic to a smooth paste with a little salt.
  • Mix garlic, oil, lemon juice, a shake of pepper and soya sauce together.
  • Pour over chick peas. Stone olives and chop.
  • Sprinkle over chick peas with parsley.
  • Mix well and chill. Wash and shred lettuce.
  • Place in a salad bowl and pile chick peas on top.
