Ingredients

  • 2 glasses - buttermilk
  • 1 - Potato
  • 2 - Carrots
  • 1/4 - Bottle Gourd
  • 2 - Tomatoes
  • 1 - Brinjal
  • 2-4 - green beans
  • 3 - Green chillies
  • 1 - Drumstick
  • coriander for garnishing
  • 1 small piece - Ginger
  • 1/4 cup - grated Coconut
  • 1 - tbsp - besan
  • 1/2 tsp - Chana dal
  • 1/2 tsp - moong dal
  • 1/2 tsp - Turmeric
  • 1 tsp - Red Chillies
  • 1/2 tsp - Cumin seeds
  • a pinch of Asafoetida
  • salt to taste
  • For tempering:
  • Methi seeds
  • Curry leaves
  • How to Make Menthi Pulusu:

    1. Boil all the vegetables and keep them aside.
    2. Grind ginger and green chillies and keep them aside.
    3. To the sour buttermilk, add besan and churn the above mixture well.
    4. Take oil in a vessel, add the seasonings to it and fry for 1 minute.
    5. Add the above vegetables and buttermilk mixture to it .
    6. Add salt to taste and grated coconut.
    7. Allow it to cook for sometime (around 15-20 mins).
    8. Heat some oil, splutter the tempering ingredients and pour over dish. Then garnish with coriander leaves.
    9. Serve hot with rice and papad.
