Ingredients

  • 1/2 cup - bajra/black millet flour
  • 1/3 cup - ragi/red millet flour
  • 2 tbsp - whole wheat flour
  • 1/2 tsp ginger-garlic paste
  • 1/4 tsp - green chillies, finely chopped
  • 3 tbsp - fenugreek leaves, finely chopped
  • 1/4 tsp - turmeric powder
  • 1 tsp - oil
  • Salt to taste
  • Ghee for cooking

How to Make Methi Bajra Khakhras

  • Knead all the ingredients to make a soft dough with enough water.
  • Divide the dough into 5 portions; roll out each portion into a 5 inch diameter thin circle/roti.
  • Cook each circle on a tawa on both sides using a little ghee until brown spots appear.
  • Fold a clean muslin cloth and use it to press the khakhra down while it is cooking over a slow flame till it is crisp.
  • Repeat with remaining rotis.
  • Cool and serve.
