Ingredients

  • 1 cup - Basmati Rice (or any long grain variety)
  • 1 medium - Onion, (chopped)
  • 6 Cloves - Garlic (Crushed)
  • 1 pinch - Turmeric powder
  • 1/4 Cup - Capsicum (finely chopped)
  • 1 - Tomato (finely chopped)
  • 1/2 cup - Mixed vegetables (finely chopped)
  • 1 tsp - Chilli powder (or to taste)
  • 1/4 tsp - Pepper powder (Optional)
  • 1 tsp - Tomato Ketchup
  • 1 tbsp - Oil
  • Salt - to taste

How to Make Mexican Fried Rice

  • Soak rice for 15 minutes, drain, and set aside.
  • Heat a pan, add washed rice, fry till it turns light brown in colour.
  • Remove and cook rice in enough water. Let it cool.
  • In a pan, heat oil, add onion and chopped vegetables.
  • Fry till onion turns golden brown.
  • Add tomato, turmeric powder, chilli powder, pepper powder and salt. Saute for few minutes.
  • Add ketchup and mix the ingredients well.
  • Add rice and mix well. Cook on medium heat for a few minutes.
  • Serve hot.
