Ingredients

  • Cooked Rice - 1 cup
  • Rotel chopped Tomatoes and Green chillies - 1 can
  • Salsa - 2 tbsp
  • Black beans - 1 can (Optional)
  • Cumin seeds - 1 tsp
  • Cilantro chopped fine - 1/4 cup
  • Grated Cheese - 1/2 cup
  • Salt to taste
  • How to Make Mexican Rice Casserole:

    1. Preheat oven to 350 degrees F. Grease an ovenproof casserole.
    2. Mix all the ingredients except cheese and pour into the casserole.
    3. Make 2 portions of the grated cheese and add one portion to the casserole.
    4. Bake for 15 mins until the casserole is hot and bubbly.
    5. Top with the remaining grated cheese and let the cheese melt.
    6. Serve hot with some beans, corn chips and salsa on the side.
