Ingredients

  • 1 box - Spanish Rice
  • 1 can or 14.5 - Tomatoes
  • 1 can - refried beans
  • 1 packet - firm Tofu
  • 2 cups - soy cheese
  • 1 packet - taco seasoning (check ingredients)
  • 1 bag - tortilla chips

How to Make Mexican Tofu Casserole

  • Cook rice according to the instructions on the box and mix in tomatoes.
  • Fry the tofu and then add taco seasoning and a little water.
  • In a medium casserole dish, crunch up tortillas in the bottom, then layer with beans and tofu. The rice will be on top with soy cheese and more tortilla chips.
  • Bake at 350 degree Celsius for about 20 minutes.
