  • 1-1/2 cup flour
  • 2 tsp ground cinnamon
  • 1-1/2 tsp baking soda
  • 1 tsp nutmeg (optional)
  • 1/2 tsp salt
  • 3 cups grated carrot
  • 1-1/2 cup sugar
  • 1 cup oil
  • 1 cup chopped walnuts (can also use almonds or cashew)
  • 3 eggs beaten

How to Make Microwavable Carrot-Nut Cake

  • Sift together flour, cinnamon, soda, nutmeg, and salt.
  • Combine carrots, sugar, oil, nuts, and eggs, and blend.
  • Add dry ingredients to the egg mixture and pour into a 10-inch pan.
  • Cook on high power in microwave for 10 to 11 minutes.
  • If you feel the cake isn't cooking evenly, keep changing the position of the pan.
  • When done, the cake will pull away from the edges of the pan.
