  • 2 cups - Basmati rice
  • 3.5 cups - Water
  • 1 cup - Carrots chopped
  • 1 cup - Spinach green (chopped finely)
  • 1 tsp - Ginger pieces (minced)
  • 1 tsp - Garlic pieces (minced)
  • 1 tbsp - Dark soya sauce
  • 1 tbsp - Chilli Sauce
  • 1 tbsp - Tomato ketchup
  • 2- Green Spring onions (chopped)
  • 1/2 tsp - Pepper powder
  • 1/4 tsp - White pepper powder
  • Salt to taste
  • 2 tbsp - Sesame oil.

How to Make Microwave Carrot N Spinach Fried Rice

  • In a microwave bowl add rice and water with 1 tbsp - of oil and cook in the microwave oven on high for 20 minutes.
  • Heat the sesame oil, minced ginger and minced garlic pieces in a microwave safe bowl for 5 mins on high.
  • Then add the chopped carrots with soya sauce, chilli sauce, tomato ketchup and cook again for 5 mins.
  • Then add the chopped spinach, pepper powder and salt (if needed), stir and cook for 2 mins until tender.
  • Now remove the bowl from the microwave oven and combine the cooked rice, the white pepper powder and toss gently.
  • Now add the finely chopped green spring onions and microwave for 2 mins again in the microwave oven.
  • Mix everything.
  • Serve hot with papads or boiled eggs.
