  • 6 round, tender medium-sized Brinjal
  • Salt
  • 1 tbsp - oil
  • 1 tsp - Red Chilli powder
  • 1/2 tsp - coriander powder
  • 1/2 tsp - Ginger Garlic paste
  • 1.5 tbsp - Corn flour
  • 1 tbsp - coriander leaves, very finely chopped
  • Garam masala, a pinch
  • Turmeric powder, a pinch
  • How to Make Microwave crispy brinjal:

    1. Cut brinjals into rounds (1/3 inch to 1/2 inch thickness)
    2. Drop them in salted water after cutting.
    3. Mix all the ingredients except oil, into a tight paste.
    4. Squeeze the brinjal pieces and coat them with masala mix.
    5. Keep aside for 15 mins.
    6. Arrange the brinjal pieces on a microwave safe plate; sprinkle oil over the pieces, cook under microwave on high for 1.5-2 mins.
    7. Turn them and cook on high for another 1.5-2 mins.
    8. Check and if necessary cook for another minute and remove.
    9. Allow some standing time and then serve as side dish or starter.
