  • 2 cups - chopped Walnuts
  • 1 cup - Sugar
  • 1/2 cup - light Corn syrup
  • 1/2 tsp - salt
  • 1 tbsp - Butter (no substitutes)
  • 1 tsp - vanilla extract
  • 1 tsp - baking soda
  • How to Make Microwave Walnut Brittle:

    1. In a covered 1-1/2-qt. microwave-safe glass dish, microwave the walnuts, sugar, corn syrup and salt on high for 4 minutes.
    2. Stir; cook 4 minutes longer. Stir in butter and vanilla.
    3. Cover and microwave on high for 2 minutes.
    4. Add baking soda; stir quickly until lightly foamy.
    5. Immediately pour on to a lightly buttered baking sheet; spread until very thin.
    6. When cool, break into small pieces. Store in an airtight container at room temperature.
