  • 250 g - plain flour
  • 3 tsp - baking powder
  • 3 tsp - castor Sugar
  • 2 large eggs
  • 175 ml - Milk
  • 75 g - Butter (melted)
  • 1/3 cup - mincemeat
  • 12 hole muffin tin
  • grated zest of 1 Orange
  • salt to taste
  • How to Make Mincemeat Muffins:

    1. Preheat the oven to 200 degree C.
    2. Sift the flour and baking powder into a large bowl.
    3. Then stir in the sugar and half a teaspoon of salt.
    4. In a separate bowl, beat the eggs, zest and milk.
    5. Stir the melted butter into the milk mix, then pour this into the flour.
    6. Stir with a large metal spoon for a dozen or so strokes, then stop.
    7. The mixture will be lumpy and not all the flour stirred in.
    8. Spoon half of the cake mixture into the cases.
    9. Then add a heaped teaspoon of mincemeat to each.
    10. Then cover with the rest of the mixture.
    11. Bake for 25-30 minutes or until risen and golden.
    12. Leave to settle for a couple of minutes before removing them from the tin.
