250 g - plain flour
3 tsp - baking powder
3 tsp - castor sugar
2 large eggs
175 ml - milk
75 g - butter (melted)
1/3 cup - mincemeat
12 hole muffin tin
grated zest of 1 orange
salt to taste
How to Make Mincemeat Muffins
Preheat the oven to 200 degree C.
Sift the flour and baking powder into a large bowl.
Then stir in the sugar and half a teaspoon of salt.
In a separate bowl, beat the eggs, zest and milk.
Stir the melted butter into the milk mix, then pour this into the flour.
Stir with a large metal spoon for a dozen or so strokes, then stop.
The mixture will be lumpy and not all the flour stirred in.
Spoon half of the cake mixture into the cases.
Then add a heaped teaspoon of mincemeat to each.
Then cover with the rest of the mixture.
Bake for 25-30 minutes or until risen and golden.
Leave to settle for a couple of minutes before removing them from the tin.
