Ingredients

  • 150 gms - potato
  • 1 medium size - carrot
  • 1 medium size - beet root
  • 1/2 cup - green peas, cooked
  • 1/2 cup - onion, minced
  • 2 tbsp - mint leaves, chopped
  • 2 tbsp - coriander leaves, chopped
  • 2 tsp - ginger-garlic paste
  • 1 tsp - chilli powder
  • 1/2 tsp - turmeric powder
  • 1 tsp - garam masala powder
  • 1 tsp - dry mango powder
  • salt to taste
  • 2 tsp - oil

How to Make Mint flavored Mixed Vegetable

  • Boil, peel and mash the potato.
  • Peel and grate carrot and beet root.
  • Heat the oil in a non-stick fry pan.
  • Add onion, fry till light brown.
  • Add ginger-garlic paste, fry till fragrant.
  • Mix all the powders with 2 tbsp of oil and add to the pan. Cook stirring for 1 minute.
  • Add carrot and beetroot. Sprinkle with 1/2 tsp of salt.
  • Cover and cook till the vegetables are soft.
  • Add mashed potato, green peas, and salt and mango powder. Mix well.
  • Add mint and coriander leaves.
  • Mix well and remove from fire.
