  • 2 cups - Basmati Rice (washed and cooked)
  • 1 - large Potato (peeled and cubed)
  • 1 - large Onion (thinly sliced lengthwise)
  • Bay Leaves - 2
  • 1/2 tsp each - Red Chilli powder, Garam Masala powder
  • Salt to taste
  • Grind to a paste with a little water:
  • 1 large bunch - fresh Mint
  • 1 cup - freshly grated Coconut
  • Green chillies - according to taste
  • 3 - 4 - Garlic pods
  • How to Make Mint Pulao with Potatoes:

    1. In a heavy bottomed pan, put a little oil and add bay leaves and the whole garam masalas.
    2. When it is slightly brown, add the onion and fry till golden brown.
    3. Then add the potatoes and cook it on a slow fry till done (cover if necessary.)
    4. Now add the mint paste and fry for a few minutes till slightly dry.
    5. Add the chilli powder, garam masala, salt and mix gently.
    6. Leave it to cool.
    7. Now, spoon by spoon, add in the rice and mix with a light hand. Be careful that the grains do not break.
    8. Serve with any raita and papad.
