How to Make Mint Pulao with Potatoes

  • In a heavy bottomed pan, put a little oil and add bay leaves and the whole garam masalas.
  • When it is slightly brown, add the onion and fry till golden brown.
  • Then add the potatoes and cook it on a slow fry till done (cover if necessary.)
  • Now add the mint paste and fry for a few minutes till slightly dry.
  • Add the chilli powder, garam masala, salt and mix gently.
  • Leave it to cool.
  • Now, spoon by spoon, add in the rice and mix with a light hand. Be careful that the grains do not break.
  • Serve with any raita and papad.
