Ingredients

  • Rice (Basmati) - 2 cups
  • Mint (Pudina) leaves - 1 bunch or 5 tbsp.
  • Coconut (grated), fresh or desiccated - 3 tbsp
  • Green Chillies- 2
  • Ginger - 3/4 inch piece
  • Garlic - 3 pods
  • Onion (medium sized) -1
  • Cumin (Jeera)- 1 tsp
  • Potato (large sized) - 1
  • Oil - 2 tbsp
  • Lime juice - 1 tsp
  • For Seasoning:
  • Oil- 2 tbsp
  • Mustard (Rai) seeds - 1/2 tsp
  • Channa (Gram) dal - 1 tsp.
  • How to Make Mint Rice:

    1. Cook the rice and keep aside.
    2. Now cut the potatoes into 1/2 x 1/2 pieces, deep fry and keep aside.
    3. Chop the onion and grind with mint (Pudina) leaves, grated coconut, cumin (Jeera), chillies, ginger and garlic into a smooth paste.
    4. Heat 2 tbsp of oil in a pan and splutter the mustard seeds and the channa dal. Now add the mint paste.
    5. Saute the paste for 3-4 mins, stirring constantly.
    6. Now add the paste to the cooked rice.
    7. Add the fried potatoes and mix well.
    8. Serve hot.
