Ingredients

  • 3-4 - medium Yukon Gold potatoes, diced
  • 1 tbsp - Olive oil
  • 1 tsp - ground black pepper
  • Salt to taste
  • 1/4 cup - Mint leaves, chopped
  • How to Make Mint-smothered Spuds:

    1. Put all ingredients other than the mint in a baking dish. Mix well and spread the potatoes in a single layer.
    2. Preheat oven to 375 degrees F and bake the potatoes for about 20 minutes until tender and golden on top. The time may vary depending on your oven and the size of the potato dice.
    3. Remove from the oven and add the chopped mint just before serving. Toss well.
    4. Serve hot or at room temperature.
