Ingredients

  • 1 chicken - cut into 8 to 10 large pieces
  • 1 cup - finely chopped mint leaves
  • 2 tsp - ginger-garlic paste
  • 2 tsp - lemon juice
  • 1 tbsp - vinegar
  • 1 tsp - cumin powder
  • 1/2 tsp - all spice powder or garam masala powder
  • 1 tsp - chilli sauce
  • 1 tsp - chilli powder
  • Salt to taste
  • 2 tbsp - oil

How to Make Minty Chicken Casserole

  • Wash the chicken and prick all over with a fork.
  • Mix together the chopped mint, ginger-garlic paste lemon juice, vinegar, cumin powder, salt, spice powder, chilli sauce, chilli powder and apply this mixture to the chicken pieces.
  • Leave to marinate for 30 mins.
  • Transfer to a buttered baking dish and drizzle oil over the chicken. Cover with aluminium foil.
  • Bake in a moderate oven(355degrees) for 45 mins.
  • serve with rice and salad.
