Ingredients

  • 50g - green peas
  • 50g - cauliflower florets
  • 50g - broccoli florets (optional)
  • 50g - paneer cubes (cottage cheese)
  • 50g - French beans, thinly sliced
  • 25g - green cabbage, shredded
  • 1 - capsicum deseeded and sliced
  • 100g - spring onions, coarsely chopped
  • 1 tbsp - oil
  • 1/2 tsp - white pepper powder
  • 1-2 - green chillies
  • salt to taste
  • For fruit salad:
  • 1 - banana (cut into small cubes)
  • 1 - apple (peeled and cut into small cubes)
  • 50g - green grapes (deseeded and chopped)
  • 50g - black grapes (deseeded and chopped)
  • 1 - orange (deseeded and chopped)
  • 3-4 - strawberries (chopped)
  • 8-10 - cherries (deseeded and chopped)
  • 10-15 - raisins
  • 100g - cream
  • 125g - yogurt
  • 2 -3 tbsp - sugar
  • black salt/salt
  • a pinch or two - white pepper

How to Make Mix veg delight

  • Heat oil in a kadai or wok and cook spring onions for half-a-minute.
  • Add green chillies and white pepper powder to it and stir.
  • Add cauliflower and broccoli florets and mix it. Cover the wok and cook it till it's half done.
  • Add capsicum and beans and stir it. Cover it and cook on a medium heat for another 3-4 mins.
  • Add cabbage and cook for another 2-3 mins.
  • Lastly, add paneer cubes and salt. Mix them well and cook uncovered for 2 mins.
  • Garnish with green coriander leaves and serve it hot with parathas.
  • To make the fruit salad:
  • Take yogurt in a bowl and add sugar and beat it nicely.
  • Add cream and mix it to form a uniform mixture.
  • Add all the fruits one by one and mix them well.
  • Lastly, add salt and pepper and mix them well.
  • Decorate with strawberries or cherries and grapes and serve chilled.
