  • 1 cup - Wheat flour
  • 1 cup - Rice flour
  • 1 cup - Gram flour
  • 1 cup - Corn flour
  • 1 cup - Cabbage (Finely chopped)
  • 2 cups - Curds (Well beaten with water, added to make buttermilk)
  • 1 medium onion (Finely cut into long strips)
  • 6 to 7 - Green chillies )Finely chopped)
  • 2 pieces - Garlic (Crushed)
  • 1/2 tsp - Turmeric
  • Oil
  • 1 tsp - Sugar
  • Salt to taste

How to Make Mixed Flour and Cabbage Uttappam

  • Mix all flours together. Add cabbage.
  • Add curds (buttermilk) to make the batter. (The batter should not be too thick or too thin).
  • Add more buttermilk if needed according to the consistency of batter.
  • Mix well and keep it aside for about 7 to 8 hours in a warm place.
  • Before preparing the uttappam, add onion, green chillies, garlic, turmeric, sugar and salt to the batter.
  • Mix it well.
  • Heat a non-stick pan and grease it with a little oil.
  • When the temperature is right, pour a large spoonful of the prepared batter.
  • Spread it to a little thick round shape.
  • Put oil on all sides of the uttappam.
  • Flip once and let the other side cook well.
  • Repeat for all of the remaining.
  • Serve hot with green chutney, tomato ketchup or pickles.
