Ingredients

  • 1/2 cup - grated parmesan cheese or white cheese
  • 2 tbsp - fresh chopped Cilantro leaves
  • 4 tbsp - Butter
  • 3/4 cup - white Onion finely chopped
  • 1/2 cup - fresh Carrots finely chopped
  • 1 small can - chick peas or garbanzo beans
  • 1/2 cup - shredded white Cabbage
  • 1/2 cup - fresh green beans finely chopped
  • 1 can - chopped Tomatoes
  • 1 tbsp - Tomato paste
  • 1 cup - Chicken stock
  • 6 Cloves - Garlic minced
  • 2 - Bay Leaves
  • 1 pinch - Red Chilli powder
  • 1 tbsp - Corn flour(optional)
  • 1 cup - heavy Cream (optional)
  • Salt for taste
  • How to Make Mixed Veg Soup:

    1. Melt butter in a heavy pot over a medium heat.
    2. Add onion, garlic and saute for a few minutes.
    3. Add carrots, beans, cabbage, chick peas, tomatoes, tomato paste, stock, salt and red pepper to the pot step by step.
    4. Bring to boil and reduce heat.
    5. Simmer for approximately for 1 hour, until all the vegetables are barely tender.
    6. Add corn starch mixed in cold water to the soup pot and simmer for 30 minutes more.
    7. Stirring all the time, correct seasoning and serve hot with chopped Cilantro and grated cheese.
