Ingredients

  • 1 tomato
  • 1 onion
  • 1 capsicum
  • 1 carrot
  • 1 potato
  • 8-10 french beans
  • 2-3 baby corns
  • 1 raw cooking banana
  • 1 tbsp - plain flour
  • 1 tsp - white vinegar
  • 1/2 tsp - soya sauce
  • 1/2 tsp - sugar
  • salt to taste
  • 3 green chillies, finely chopped
  • 1 tbsp - oil
  • 1/2 cup - grated cheese

How to Make Mixed Vegetable Bake

  • Peel (where required) and chop separately, all vegetables into big chunks.
  • Combine potato, beans, babycorn, banana, carrot.
  • Boil them in salted water till tender but not mushy.
  • Drain, hold under running water in a colander and keep aside.
  • Heat oil, add onion and capsicum, stir till tender.
  • Add chillies, tomatoes, vinegar, soya sauce, salt, sugar.
  • Stir and cook for a minute. Add boiled vegetables.
  • Stir. Sprinkle flour all over. Toss.
  • Transfer to a casserole, sprinkle cheese.
  • Toss lightly to let some cheese into vegetable.
  • Bake in a hot oven till the vegetables sizzle.
  • Serve hot with garlic buns or warm bread.
