Ingredients

  • Basmati Rice - 2 cups ( washed and soaked )
  • Peas - 1/2 cup
  • Corn - 1/2 cup
  • Tomatoes - 1 thinly chopped
  • Carrot 1 cup grated
  • Capsicum ( yellow , Orange and green ) 1/2 each long slices
  • Egg Whites 6
  • Garam Masala - 2 tsp
  • Curry leaves - 1 stalk
  • Coriander -2 tbsp chopped
  • Salt - to taste
  • Water - 5 cups
  • Olive oil - 1 tsp
  • How to Make Mixed Vegetable Rice:

    1. After washing rice soak in 5 cups of water and salt for one hour.
    2. Wash all the vegetables thoroughly. Take a clean microwave bowl.
    3. Grease the bowl with oil or ghee. Put all the vegetables in the bowl, sprinkle salt and water on top of them. Microwave for 2 mins.
    4. Take another microwave bowl, cook rice separately until cooked (approx. 20 mins). Mix cooked rice with the vegetables .
    5. Add salt and garam masala, curry leaf.
    6. Pour egg white on top layer , microwave for 2-4 mins.
    7. Sprinkle with coriander leaves and black pepper powder and serve hot. You don't need any curry with this rice. Enjoy with a glass of wine.
