Ingredients

  • 2 cups - mixed vegetables such as carrot, potato, Cauliflower (chopped)
  • 3 - Onions (chopped)
  • 3 - Green chillies (slit lengthwise)
  • 1 tsp - Garlic (chopped)
  • 1 tsp - Ginger (chopped)
  • 1/2 tsp - pepper Corns
  • 2 - Cloves
  • 2 pieces - Cinnamon
  • 1 cup - thick Coconut Milk
  • Salt to taste
  • 2 tbsp - oil
  • How to Make Mixed Vegetable Stew:

    1. Heat oil in a pan and fry onions till golden brown.
    2. Add green chillies, ginger, garlic, pepper and spices and saute for a few minutes.
    3. Add the vegetables, salt and sufficient water and cook till vegetables are tender.
    4. Stir in the coconut milk and simmer for a few minutes.
