Ingredients

  • 2 cups - mixed vegetables such as carrot, potato, cauliflower (chopped)
  • 3 - onions (chopped)
  • 3 - green chillies (slit lengthwise)
  • 1 tsp - garlic (chopped)
  • 1 tsp - ginger (chopped)
  • 1/2 tsp - pepper corns
  • 2 - cloves
  • 2 pieces - cinnamon
  • 1 cup - thick coconut milk
  • Salt to taste
  • 2 tbsp - oil

How to Make Mixed Vegetable Stew

  • Heat oil in a pan and fry onions till golden brown.
  • Add green chillies, ginger, garlic, pepper and spices and saute for a few minutes.
  • Add the vegetables, salt and sufficient water and cook till vegetables are tender.
  • Stir in the coconut milk and simmer for a few minutes.
