Ingredients

  • 2 cups - mixed vegetable, stir-fried in 2 tsp - margarine
  • For Walnut Sauce:
  • 1 cup - low fat Yoghurt
  • 70 g - walnut, coarsely ground
  • 1/2 Clove - garlic, crushed
  • 1 Egg white
  • a dash - Red Chilli powder (optional)
  • 1 tbsp - crumbled Cottage cheese
  • 1 tsp - chopped red Capsicum
  • 1 tbsp - finely chopped green Capsicum
  • low fat salt to taste
  • pepper to taste

How to Make Mixed Vegetable with Walnut Sauce

  • Combine walnuts, yoghurt, cheese, egg white, garlic and mint leaves in a saucepan, heat gently for 2-3 mins. Do not boil.
  • Remove from heat, add salt, pepper, chopped red and green capsicum.
  • Serve over stir-fried vegetables.
