Ingredients

  • 100 gms - drumsticks, cut into two inch pieces each
  • 100 gms - bean
  • 100 gms - red Pumpkin
  • 100 gms - white pumpkin
  • 100 gms - Brinjals
  • 100 gms - Potatoes
  • 1 tsp - mustard powder
  • 3 tsp - grated green Mango paste
  • 2 tbsp - Mustard oil
  • 1/4 tsp - Haldi powder
  • 1 inch piece - ginger, cut into small pieces
  • Salt to taste

How to Make Mixed Vegetables with Green Mango

  • Cut the vegetables into 1 inch pieces and wash well.
  • Boil only the drumsticks in hot water for 2 mins and keep aside.
  • Drain and keep aside.
  • Heat the oil and add the vegetables and the par boiled drumsticks and ginger.
  • Cook and stir on slow fire for 2/3 mins adding salt to taste.
  • Mix in the haldi powder and mustard powder and the raw green mango paste and continue to cook on low fire.
  • Add 2 tbsp of water and cover with a lid.
  • Cook till the vegetables are tender but not overcooked.
  • Serve with plain rice.
