  • 1 cup - Barley flour
  • 1 cup - Grated mixed veggies (carrot, radish, zucchini, broccoli and cabbage)
  • 1 tsp - Ajwain seeds
  • Salt
  • Oil

How to Make Mixed Veggies Barley Paratha

  • Add enough salt to the vegetables and keep aside for few minutes.
  • Add the vegetables to the whole wheat flour, barley flour and ajwain seeds.
  • Gradually add the water left by the vegetables, plain water and salt (if needed).
  • Knead everything as a soft dough. Keep aside for half an hour.
  • Make medium-sized balls from the dough.
  • Dust with enough flour and roll as slightly thick circles.
  • Drop the flattened paratha over a hot tawa gently.
  • Drizzle the oil and cook on both sides until they get well cooked.
  • Enjoy with coconut chutney.
