Ingredients

  • 1 cup - flour
  • 1 tsp - baking soda
  • 1 tsp - baking powder
  • 1/4 tsp - salt
  • 1.5 tsp - ground Cinnamon
  • 1/4 tsp - Nutmeg powder
  • 2 - eggs
  • 1/2 cup + 2 tbsp - oil
  • 1/2 cup - Sugar
  • 1/2 cup - Brown sugar
  • 1 tsp - vanilla essence
  • 1.5 cups - grated Carrots
  • 1 cup - walnuts/cashew nuts (optional)
  • 1 cup - Raisins (optional)
  • How to Make Moist Carrot Cake:

    1. Preheat oven to 180 degree C.
    2. Sieve the flour with baking soda, baking powder, salt, cinnamon powder and nutmeg powder. Keep aside.
    3. Whisk the eggs in a bowl. Add oil, sugar and vanilla essence. Mix well.
    4. Gradually, add the flour mixture into it.
    5. Add the grated carrots, nuts and raisins, if using. Mix well.
    6. Pour the batter into prepared cake tins and bake in the oven, for approximately 45 minutes or till a skewer, inserted in the centre of the cake, comes out clean.
