Ingredients

  • 1 cup - flour
  • 1 tsp - baking soda
  • 1 tsp - baking powder
  • 1/4 tsp - salt
  • 1.5 tsp - ground cinnamon
  • 1/4 tsp - nutmeg powder
  • 2 - eggs
  • 1/2 cup + 2 tbsp - oil
  • 1/2 cup - sugar
  • 1/2 cup - brown sugar
  • 1 tsp - vanilla essence
  • 1.5 cups - grated carrots
  • 1 cup - walnuts/cashew nuts (optional)
  • 1 cup - raisins (optional)

How to Make Moist Carrot Cake

  • Preheat oven to 180 degree C.
  • Sieve the flour with baking soda, baking powder, salt, cinnamon powder and nutmeg powder. Keep aside.
  • Whisk the eggs in a bowl. Add oil, sugar and vanilla essence. Mix well.
  • Gradually, add the flour mixture into it.
  • Add the grated carrots, nuts and raisins, if using. Mix well.
  • Pour the batter into prepared cake tins and bake in the oven, for approximately 45 minutes or till a skewer, inserted in the centre of the cake, comes out clean.
