  • 1/2 cup - math (tiny brown gram-like green gram) dal. If unavailable, use green moong dal
  • 2 cups - Wheat flour
  • 1/2 tsp - Cumin seeds (crushed coarsely)
  • 1 tsp - Coriander seeds (crushed coarsely)
  • 2 tsp - Red Chilli powder
  • 1/2 tsp - Garam Masala (optional)
  • 3-4 pinches of Asafoetida
  • salt to taste
  • 2 tbsp - Ghee
  • oil to shallow fry
  • How to Make Moongdi:

    1. Wash and soak dal for 4 hours. Drain, leaving skins intact.
    2. Mix all the ingredients, except oil.
    3. Add a little water at a time, and knead into a pliable dough.
    4. Take a small ball, and using dry flour for dusting, roll into circles as thin as possible.
    5. Roast on griddle, cooking both sides.
    6. Drizzle a little oil on each side.
    7. Press with a small wooden presser till both sides are crisp.
    8. Serve hot. If storing, cool well before placing in an air-tight container.
    9. Serve with pickles, jam, chutney or curd.
