Ingredients

  • 1 cup - couscous, cooked and washed
  • Juice of 1 Lemon
  • 2 - green chillies, chopped
  • Salt - to taste
  • 2 tbsp - cilantro, finely chopped
  • 1/2 tsp - fresh ground black pepper
  • 1 clove - garlic, minced
  • 1 - ginger, minced
  • 1 - onion, chopped
  • 1/2 cup - scallions, finely chopped
  • 1 tbsp - mint, finely chopped | 1 - cucumber, finely chopped
  • 1 - red bell pepper, chopped
  • 1 - yellow bell pepper, chopped
  • 1 - green bell pepper, chopped
  • Dressing:
  • 1 tbsp - olive oil
  • 2 tsp - vinegar
  • 1/2 tsp - Dijon mustard
  • 1/2 tsp - Worcestershire sauce
  • 1/2 tsp - Tabasco sauce
  • 1/2 tsp - black pepper, powdered
  • 1/2 tsp - paprika
  • Salt - to taste
  • 1 tsp - dried dill
  • 1 tsp - dhania powder
  • 1 tsp - jeera powder

How to Make Moroccan Couscous Salad

  • Mix the couscous with chillies, cilantro, salt, pepper, garlic, ginger, onion, scallions, mint, cucumber, bell peppers and lemon juice, and let sit for 1/2 hour.
  • Meanwhile blend all the ingredients for the dressing in a jar. Shake well to mix thoroughly.
  • After half an hour, pour dressing over the salad, toss well, and serve garnished with cilantro and mint.
